COCONUT DATE BITES


 
 

This recipe was born out of frustration of spending eight dollars on a tiny bag of store bought coconut macaroons in a moment of desperate dessert frenzy. They quickly became staples in both of our kitchens as a quick and tasty (not to mention refined sugar free!) dessert or snack. Ingredients

  • 5-6 medjool dates, soaked in warm water to soften

  • 1 cup shredded coconut

  • ½ cup almond meal

  • 2 Tbsp coconut oil

  • 1.5 Tbsp lemon juice

  • Pinch of salt (to taste)

  • Zest of ½ lemon

 

Instructions

  1. Place dates in bowl and cover with warm water until softened, about 5 minutes. Remove pits.

  2. In food processor combine coconut, almond meal, coconut oil, lemon juice, salt and zest; process until mixture holds together when pinched between your fingers and is the consistency of wet sand.

  3. Roll mixture into silver dollar sized balls and place on a cookie sheet or plate lined with parchment paper. Place sheet or plate in freezer for 15-20 minutes to allow the macaroons to harden.

  4. Store in a container in the freezer.

Makes about 12 macaroons

NOTES

*If the consistency feels a little dry, try adding a touch more coconut oil or lemon juice, depending on which flavor you want to bring out more!
