How to Make a Dutch Baby

 
 

 
 

There is something mysterious about a dutch baby that makes us immediately assume we'll mess it up. But here's the thing: it's really hard to. The eggy, pillowy, sometimes crunchy texture is just another platform for toppings and honestly, we love a vehicle for tasty toppings. Ju made a quick compote of apple and spices, while Dak opened a jar of jam from 2015. This is the time to reach into the stockpile folks. Because we're not grocery shopping as often right now, making a dutch baby was actually a really reasonable thing to do. Mix up some flour, eggs, spices, sugar and roughly 30 minutes later you're pulling it out of the oven. Everyone's oven is slightly different, so we agreed that we would have baked it at 425 degrees for only 15 minutes and at 300 degrees for closer to 5-6 minutes.

This great recipe is from Amy, the founder of Overseasoned (overseasoned.com). Add in the flavors you like—we did cinnamon, cardamom and nutmeg, but you do you! This recipe could even be made into a savory dutch baby by leaving out the spices and adding some herbs instead. Ingredients

  • 3 eggs

  • 1/2 cup flour

  • 1/2 cup milk or non-dairy alternative (room temperature)

  • 4 tablespoons unsalted butter (room temperature)

  • 1/4 tsp salt

  • 1 tablespoon sugar

  • Pinch of cinnamon

  • Pinch of cardamom

  • Pinch of nutmeg

 

Instructions

  1. Preheat oven to 425 degrees. Combine flour, eggs, milk, sugar and spices in a blender or by hand until smooth.

  2. Place 4 tablespoons butter in a 10” cast iron skillet or baking dish and place in oven for a few minutes, just until butter is melted. Keep a close eye on it so it doesn’t burn.

  3. As soon as it is melted, remove from the oven, pour in the dutch baby batter from the blender and return it to the oven to bake. Avoid opening the oven door to allow it to puff up.

  4. After 15 minutes, reduce temperature to 300 degrees and bake for another 5-6 minutes or until puffed and lightly golden brown. As always, keep an eye on it for the last bit of cook time—every oven is different and your dutch baby might cook faster or a little slower.

  5. Top with whatever you have on hand: butter, syrup, honey, jam, fresh fruit, you name it!
